About me

About Me Hola! I’m a proud Chilean, an industrial engineer turned health coach, and a mother of two wonderful children who inspire me every day to live more consciously and connected to nature.

My journey began with a simple but powerful realization: we are getting sick from what we eat, but we can use the same to turn things around. Over the years, I’ve witnessed how deeply our food choices affect our health, energy, and emotions. As a family, we’ve experienced the incredible transformation that comes from eating clean, real, and nourishing food — and that’s when my mission became clear.

Through my Chilean-style clean Empanadas, I want to bring back the connection between what we eat and how we feel. Each empanada is handmade in small batches using organic stone-milled flour for maximum nutrition, Spring Water free from chemicals, and organic or locally sourced ingredients — including grass-fed finished beef.

There are no preservatives, no pesticides, no GMOs — just honest food made with love and intention.

Recently, I’ve also ventured into the world of gluten-free dough, creating my own special blend of gluten-free dough that doesn’t compromise on flavour or texture. It’s been a beautiful challenge, and I’m proud to offer an option that allows even more people to enjoy my Empanadas without sacrificing the authentic taste and comforting feel of the original recipe.

But this journey isn’t just about food — it’s about community. I believe we need to become more independent and reconnect with the sources of our nourishment. It’s time to support local farmers, grow our own food, and rebuild a sense of shared responsibility for our health and environment. When we take food back into our own hands, we take back our wellbeing, our planet, and our connection to each other.

For me, food is medicine — not just for our bodies, but for our souls and communities. Together, we can create a more conscious, self-reliant, and nourishing way of living.

Welcome to Virginia's Kitchen — where tradition, wellness, and community come together, one Empanada at a time. 🌿
